How Much Beef Do I Receive?

The final packaged amounts of beef will vary depending on the breed, age, height, length, and live weight of the animal, as well as the season of the year. We strive to emphasize uniform quality of our product more than package count. The average order of a quarter of beef will yield approximately 90 to 115 pounds of packaged meat that would typically include quantities in the following table.

 Ground Beef (2 pound tubes = eight 1/4 pound servings) 12 to 15 packages
 Stew Meat (1 pound packages) 2 to 4 packages
 Soup Bones (2 pound packages) 1 package
 Short Ribs (2-3 pound packages) 1 to 2 packages
 Brisket 1 package
 Liver 1 package

Our beef is custom-aged for maximum tenderness and flavor. It is then cut-down, placed in vacuum-sealed packaging, labeled and frozen for pick-up.

Customizing Your Order

There are some customizing options available if you order a side or a whole beef.  Please give Paulette a call at 901-340-4969 and she will be happy to discuss your customizing options.

Customizing options include (some at additional charge): 

~ Additional Ground Beef by grinding some Roasts  and/or Round Steak
~ NY Strip and Filet (bone out T-bone)
~ Beef Sausage made with our hand-selected seasoning mix free of artificial flavors, preservatives and MSG

Pricing

Pricing as of 23 March 2013:

Split-side (quarter) averages approximately $595 - $640 depending on rail weight of steer.

How this compares to what you can buy locally:
I did a comparison of a typical split-side based on the chart above and shopped two of our well-known, local stores on Friday, 22 Mar 2013.

Store 1:  A local, healthy alternative grocery store, all of the beef in comparison was grass-fed, hormone and antibiotic-free just like ours.  Total cost was $1,026.92 for a quarter of beef if purchased via this retail location.

Store 2:  The market leader grocery store - NONE of the beef was grass fed, as they didn't have any in the case to compare.  Just regular beef - not Angus, not grass-fed, not hormone and antibiotic-free.  Just regular beef from the grocery.  Total cost was $730.85 for a quarter of beef if purchased via this retail location.

So as you can see, we are still an exceptional value and priced substantially lower than either grass-fed or regular beef in our local markets.
